The Coca-Cola Company R&D Sensory Science and Consumer Center Manager in Ciudad De Mexico, Mexico

The person holding this role is responsible for overseeing the Innovation Guidance Function (Sensory Science applied for Product Development) in R&D Latam, ensuring consistency in the approach to the research and development projects regarding sensory and consumer research, providing essential guidance and direction to the design of tests, use of appropriate research methodologies, and data analysis, results interpretation and recommendations for technical decision-making.

This role is responsible to develop Latam Innovation Guidance Team capabilities, by leveraging projects learnings to connect with market product performance, constantly looking to provide sensory and consumer research that better predicts market results; identifying and developing new statistical techniques and methods to enhance product development projects related to innovation or product reformulation; maintaining and building an external network to stay abreast of new approaches and techniques. Additionally, this role leads the Consumer Center operation in R&D Latam, ensuring service levels in quality and time to enable R&D Innovation and Product Reformulation Projects, leading the team of scientists in the center with a broad range of experiences from junior people to senior professionals.


  1. Engage Innovation Guidance function in Latam to ensure consistency in the approach for sensory and consumer research in product development, innovate or modify methodologies for product evaluation according to business requirements, influencing to do the right research at the right time increasing project’s success rate.2. Manage R&D Latam Consumer Center Operation, controlling budget, supplier´s contract and ensuring quality and timely results for sensory and consumer research provided3. Serve as the R&D Latam Innovation Guidance go-to-person for R&D local and global partners and business unit partners (marketing, K&I).4. Develop proper and enough technical capabilities in Latam Product Guidance community (both direct and dotted-line reports) to efficiently deliver Innovation Guidance objectives in Product Development Projects.5. Coach and oversee Innovation Guidance scientist in consumer center work to ensure projects are delivered with quality and time.6. Engage with K&I/CMI teams and Brand Managers in Latam to understand and provide insights to innovation and product reformulation performance in the market (post launch review)7. Participate in Global R&D Product Guidance Community to share and capture learnings from projects, methodologies and results. Maintaining and building an external network to stay abreast of new approaches and techniques


  • Proficient knowledge in the area of quantitative research which involves the design and implementation of sensory and consumer research studies, including creation of the research design, implementation and data gathering, data analysis, interpretation, implications and next steps.

  • Demonstrates strong working knowledge in the use of experimental designs (DOE, including two-level factorials and optimization techniques), data management, qualitative research techniques and research-on-research applications.

  • Sound knowledge of sensory and consumer testing techniques and principles including a deep understanding of descriptive analysis (DA) and the relationship to consumer data to identify sensory drivers of consumer liking.

  • Working knowledge of psychophysical measurement methods (both theory and application).

  • Working knowledge of statistics including the appropriate use of statistical techniques to analyze and interpret data (including parametric and non-parametric methods, ANOVA, and modeling tools) and the design of experiments (DOE).

  • Competent to innovate or modify methodologies for product or ingredient evaluation according to business requirements.

  • Working knowledge of sensory assessment of food/beverage ingredients and sweeteners.

  • Experience with automated sensory data collection systems.

Related experience:

  • Bachelor's Degree in Food Science or equivalent with either a concentration/major in sensory science, behavioral psychology or applied statistics, at least 6 yrs of experience with R&D or similar.

Travel: Up to 30%.
